Bombay Duck is dried bombil fish from Southern Asia. They are a rich source of iron and omega-3 fish oils, and are fished from November to January. The bombil are washed, filleted, and then sun-dried on bamboo frames. Lovers of Bombay Duck eat it as a curry side dish, served as a starter, or crumbled over curry and rice as a garnish.

HOW TO COOK BOMBAY DUCK

Deep fry Bombay Duck in oil for about 2.5 - 3.5 minutes, depending on temperature. Leave to drain excess oil on some kitchen paper.

HOW TO STORE BOMBAY DUCK

Store in a cool, dry place away from direct sunlight.

very good

Been a fan of bombay duck for as long as I can remember. Then it disappeared thanks to EU regs now thanks to Southern I can enjoy probably the best bombay duck ever. Simple to prepare makes a curry complete excellent service too
